Goji Berrie Bars



Ingredients : 
2 cups rolled oats, 1 cup pumpkin seeds, 1/4 cup pecan pieces chopped, 1/4 cup walnuts chopped, 1/4 cup chia seeds, 1/3 cup sesame seeds toasted ,1/2 cup water, 4 dates seed removed (soaked in water for about 10 min), 1/2 cup shredded coconut, 1/2 coconut oil,3/4 cup goji berries (soaked in warm water for about 10 min), 1/3 cup peanut butter, 3 tsp cinnamon.                         

Directions: 

preheat oven to 180°. Toast sesame seeds on baking paper on tray. In a cup add the chia seeds and water. Leave for 10 min. Combined oats, pumpkin seeds, pecans, walnuts, shredded coconut, and cinnamon. Stir until all mixed. In a food processor blend dates, and coconut oil. Add the dates and 1/2 coconut oil, peanut butter, goji berries together and mix until well combined. Place mixture on a lined baking tray. Flatten mixture and pack down well. Sprinkle toasted sesame seeds on top. Leave I'm freezer for about an hour. Remove and cut with a sharp knife and enjoy.                

Sesame seeds include a combination of vitamins and minerals. They contain an antioxidant and anti-inflammatory compound called sesamol which also exhibits anti-atherogenic properties, thus improving cardiovascular health.  They are full of zinc, which is an essential mineral to produce collagen. Zinc is great for healing damaged tissues anywhere in the body.
