cauliflower rice with sundried tomato basil

1 large head cauliflower, cut into small florets 6 cherry tomatoes chopped 2 cups baby spinach 1/2 cup sundried tomatoes 3 tbs of flaxseeds 1 tbsp. basil freshly chopped basil Juice of one lemon.                        1 tbsp. extra-virgin olive oil.     Place cauliflower florets in a food processor and pulse until it resembles rice.            Place cauliflower "rice" in a pan, on a low heat and slowly remove the moisture. Add everything to cauliflower except for the basil, keep simmering  and stirring on a low heat until the lemon juice disappears Once the moisture is gone turn off heat, add the fresh Basil and stir through and serve.           Cauliflower contains antioxidants, which work as anti-aging agents for the skin.
