Antioxidant Salad

Tomato salad full of lycopene. Lycopene is a powerful antioxidant, which can reduce the inflammatory response to UV damage by  neutralising harmful molecules that are produced in the skin as a result.

Healthy Zucchini chips

Ingredients: 1 zucchini, sliced very thin 1 tbsp olive oil,  sea salt Directions: Preheat oven to 400  Coat zucchini slices with some olive oil and sprinkle sea salt. Arrange the zucchini slices in a single layer on the rack. Bake 15-20 minutes. Turning over halfway through. Vitamins A & C found in zucchinis are strong antioxidants and are very helpful in maintaining a healthy and youthful skin. Vitamin A provides a healthy skin and vitamin C fights against free radicals that are harmful to the skin that cause aging of skin like appearance of wrinkles and fine lines, as well as age spots.   

Asparagus, Almonds, and Avocado Salad

Ingredients: 1 Dozen asparagus, (Cut off tough part and discarded) 1 ripe avocados, (cut in slices) ½ cup almonds, toasted 2 tbsp sesame seeds, toasted Dressing:  2 tbsp extra virgin olive oil  1 tbsp orange juice 1 tbsp lemon juice 1 tsp sesame oil finely grated zest of ½ lemon, no pith  sea salt & ground black pepper   Directions:  Cook asparagus in boiling water for 3 minutes then drain. Place in a bowl with avocados, almonds, and sesame seeds. Combine the dressing ingredients and toss gently.   Avocados are rich in healthy fatty acids, vitamins and antioxidants.  www.bellomoi.com

Green Detox Juice

1 apple chopped 1 lemon peeled 2 celery stalks 1 cucumber 1 cup of spinach 1 cup of parsley Add all the ingredients together in a juicer and juice.                               Celery is rich in Vitamin A, C and E which act as potent antioxidants by reversing and protecting against free radical damage. Vitamin A delays signs of aging. Vitamin E keeps your skin moisturized and hydrated from within. Celery is a good source of skin friendly minerals like magnesium, calcium, phosphorus, selenium and potassium which keep your skin youthful and glowing. It is also low in calories. www.bellomoi.com

Vegetable Fried Rice

2 3/4 cups water, 1 1/2 cups white rice, 1 chopped onion, 1 chopped carrot, 4 chopped asparagus, 1/3 cup frozen corn,1/3 cup frozen peas, 3 tablespoons olive oil,  1 teaspoon toasted sesame oil, 1 teaspoon glutenfree soy sauce, garlic and pepper to taste.                      Bring water to a boil. Add rice, reduce heat, cover and cook over medium low heat until tender, 15 to 18 minutes.  Heat a nonstick skillet over high heat. Add oil to the pan. Add onions,carrots, asparagus to the pan and quick stir-fry veggies 2 minutes. Add rice to the pan and combine with veggies. Fry rice with veggies 2 or 3 minutes. Add peas, corn, gluten free soy sauce, and  toasted sesame oil to the rice and stir fry 1 minute more, then serve.                                Rice is cholesterol free. Fresh Summer Salad

Fresh summer salad 5 Roma tomatoes cut in half 1/2 cup chopped parsley 1/4 cup chopped red onion 1 teaspoon olive oil drizzle of balsamic vinegar salt and pepper to taste Toss all ingredients together and serve. Tomatoes contain a power house nutrient, lycopene, which has an impressive spectrum of health benefits. Lycopene isn’t the only antioxidant tomatoes are rich in. Antioxidants help to eliminate dangerous free radicals that damage DNA and cell structures in the body. cauliflower rice with sundried tomato basil

1 large head cauliflower, cut into small florets 6 cherry tomatoes chopped 2 cups baby spinach 1/2 cup sundried tomatoes 3 tbs of flaxseeds 1 tbsp. basil freshly chopped basil Juice of one lemon.                        1 tbsp. extra-virgin olive oil.     Place cauliflower florets in a food processor and pulse until it resembles rice.            Place cauliflower "rice" in a pan, on a low heat and slowly remove the moisture. Add everything to cauliflower except for the basil, keep simmering  and stirring on a low heat until the lemon juice disappears Once the moisture is gone turn off heat, add the fresh Basil and stir through and serve.           Cauliflower contains antioxidants, which work as anti-aging agents for the skin. What you are putting inside makes a difference on the outside!

Want healthy skin? Treat it right and it will respond. What you eat and drink  all affect your skin. Forget the pop and drink ONE cup of coffee a day.  Drink tea and lots of water the rest of the day. The caffeine in the coffee and tea may help protect you from skin cancer. They are a great source of antioxidants.   Think fruits and veggies like grapefruit  and watermelon that are high in lycopene. The lycopene may shield the skin from  UV damage and smooth the skin. Carrots, spinach, broccoli and pumpkin are powerhouse protectors for the skin.
