Vegetable Fried Rice

2 3/4 cups water, 1 1/2 cups white rice, 1 chopped onion, 1 chopped carrot, 4 chopped asparagus, 1/3 cup frozen corn,1/3 cup frozen peas, 3 tablespoons olive oil, 1 teaspoon toasted sesame oil, 1 teaspoon glutenfree soy sauce, garlic and pepper to taste.                     

Bring water to a boil. Add rice, reduce heat, cover and cook over medium low heat until tender, 15 to 18 minutes. 
Heat a nonstick skillet over high heat. Add oil to the pan. Add onions,carrots, asparagus to the pan and quick stir-fry veggies 2 minutes. Add rice to the pan and combine with veggies. Fry rice with veggies 2 or 3 minutes. Add peas, corn, gluten free soy sauce, and  toasted sesame oil to the rice and stir fry 1 minute more, then serve.

It is also a great source of energy.  Rice is an good source of vitamins and minerals like niacin, vitamin D, calcium, fiber, iron, thiamine and riboflavin.These vitamins provide the foundation for body metabolism, immune system health, & general functioning of the organ systems, since vitamins are commonly consumed in the most essential activities in the body.
